Job Description

We require chefs for the restaurant of a brand new hotel of our Parent company Mahara Group in Dubai

The job holder will be required to:
  • Maintain the highest possible quality of dining experience for members/guests and insure that the dishes served maximize cost efficiency and revenues with minimal wastage and spoilage
  • Supervise / make the preparation, plating and delivery of food in the restaurant
  • Ensure that all internal and external customers feel welcome and are given responsive, friendly, and courteous service at all times.
  • D) Ensure that all food and beverage products are consistently prepared and served according to the restaurants brand serving standards.
  • Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the culinary preventative maintenance programs in place.
  • Provide support in all food purchasing and establish maintain effective relationships with food, beverage and restaurant supply vendors.
  • Monitor and maintain appropriate inventory levels of food and beverage to meet the needs of the operating Restaurant while minimizing costs, waste and spoilage.
  • Ensure inventory controls and stock on hand value reports are carried out as per company guidelines, and submitted in a timely manner as determined by the company
  • Ensure all expenses relating to the purchases of food and beverages is documented, receipted & accounted for as per company guidelines, and submitted in a timely manner.
  • Maintain a full inventory list of all ingredients, suppliers, cost and menu recipe food cost calculations as per current menu offerings and pricing.

Job Specification

  • 3+ years experience in a fine dining/banquet production kitchen as an Executive Chef or Sous Chef.
  • Experience in preparing Pakistani/Indian, continental and Chinese food.
  • 3+ years of culinary management experience in food service, fine dining, or restaurant with inventory and purchasing knowledge and control is important.
  • Experience and proven ability to effectively manage subordinates such as sous/assistant chefs and wait staff and communicate well with other members of company management.
  • Prior experience with profit accountability and/or food cost management/containment with a proven ability to successfully control food costs are major pluses.
